Yoghurt bomb with fruit coulis (traditional & Thermomix)
One of the best dessert creams that is also a real eye-catcher, light, fresh and quick and easy to prepare in advance.

Ingredients:

Yoghurt bomb with fruit coulis (traditional & Thermomix)

Preparation:

Whip the cream until stiff. In another bowl, mix the yoghurt with the lemon zest, icing sugar and vanilla sugar and then fold in the stiffly whipped cream.

Place a large kitchen sieve (hair sieve approx. 20 cm in diameter) in a bowl. Moisten a clean tea towel briefly under the tap, wring out well and line the sieve with it. I personally use a butter cloth for this, as it is finer and therefore does not need to be moistened. Pour in the cream and smooth it out. Cover with cling film and leave to drain overnight in the fridge.

For the fruit coulis, chop the fruit using a hand blender or food processor. If using frozen fruit, leave to defrost briefly to make it easier. Place in a saucepan with the sugar and lemon juice and bring to the boil briefly, stirring occasionally. Leave to cool and keep in the fridge until ready to serve.

The next day, just before serving, remove the cling film, turn the yoghurt bomb out onto a deeper serving dish and carefully remove the tea towel/butter cloth.

Pour the coulis around the yoghurt bomb and garnish with fresh fruit of your choice and mint, if desired. Serve cold.
