To make the homemade puff pastry, put the flour, butter, water and salt in the bowl of a food processor (depending on the food processor, blade or leaf attachment) and knead roughly until you have a kind of crumble, but with large chunks of butter still in it. It is essential that these large chunks of butter are retained.

Tip the mixture onto the floured work surface and shape into a ball without working the dough too much (the chunks of butter must be clearly visible). 

Roll out the dough into a rectangle 4 - 5 mm thick. Fold the dough lengthways into 3 or 4 layers and press firmly to form a thick sausage. 

Turn the dough a quarter lengthways and roll out again, not too thin and not too thick. Roll into a snail shape. Well demonstrated in the aforementioned video.

Wrap in cling film or place in a freezer bag and place in the fridge for at least 30 minutes. 

The dough can now be rolled out as normal. Place the snail with the smooth side up and work the top to form a flatter block. Then roll out the dough with a rolling pin. Work the dough from both sides, dusting lightly with flour each time you turn it. The dough will gradually become smoother (don't touch it too much with your hands so that it doesn't get too warm).

Prepare one or two 24-cup mini muffin moulds for the goat's cheese puff pastry stars. Cut out the puff pastry with a star cutter with a diameter of approx. 7 cm. Place the stars in the cavities of the muffin tin and press down lightly to create small baskets. Spread about ½ tsp of goat's cream cheese on each puff pastry star (works even better with a piping bag) and chill for 20 minutes. Preheat the oven to 200 C fan or 220 top/bottom heat.

Bake the puff pastry stars for 12 - 15 minutes until golden brown and then remove from the oven. 

Spread 1 teaspoon of pesto on one half of the puff pastry stars and the chopped tomatoes on the other half.

Transfer to a serving dish and serve slightly warm.
