Ingredients:

Preparation:

If you add the raisins, rehydrate them in a glass of rum.

Preheat the oven to 180 C.

Toss the peeled, cored and quartered apples with the brown sugar and the cinnamon and let cook for a couple of minutes in the butter in a pan. They should be golden but still have bite to them. Mix with the drained raisins and pour the mixture into an oven proof dish.

For the crumble topping, place the flour, salt and brown sugar into a bowl. Slice the cold butter and rub it in with your fingertips until the mixture looks like moist breadcrumbs. Shake the bowl and any big bits will come to the surface - rub them in.
Alternatively, pulse in a processor until sandy (don’t over-process).

Pour the crumb mix over the apples to form a pile in the center, then use a fork to even out. If using the oats, sprinkle them over the mixture.

Set the dish on a baking tray and put in the preheated oven until the top is golden (depending on the oven 25 to 30 minutes approximately). Serve warm with vanilla ice, lightly whipped cream or custard.
