Cesar Salad Wrap (traditional & Thermomix)

For all fans of the delicious Cesar Salad, and most especially for the ones who love the vegetarian Cesar salad that I have on my blog, try these wraps! They are INCREDIBLE!!! Perfect for a picnic or for a quick lunch / dinner, or even for the office. The divine sauce, crunchy croûtons, fresh tomato bites, chargrilled chicken and crisp salad all packed into a handy wrap. OMG!

  • For the dressing
  • 240 ml neutral oil
  • 50 g of grated parmesan
  • 2 cloves of garlic, pureed
  • 4 tsp capers, finely chopped
  • 1 egg
  • 1 tsp mustard
  • 1 dash Tabasco (optional)
  • lemon
  • Pepper, salt
  • For the wrap
  • Olive oil
  • 500 g chicken breast fillets in strips
  • sweet paprika powder
  • old white bread, cut into chunks for the croutons
  • 2 romaine lettuce hearts
  • 150 g cherry tomatoes, quartered
  • 6 wraps

Heat the olive oil in a large frying pan and sear the chicken breast fillets in it on all sides. Season with salt and paprika powder. Remove, leave to cool briefly and tear into pieces.

Fry the bread in oil to make croutons. Let them dry off on a kitchen towel.

Chop the romaine lettuce into very small pieces and place into a bowl.

Place the egg into a mixing bowl together with the parmesan, capers, mustard, tabasco, lemon and garlic and blitz it so that it becomes smoother. Then add the oil in a thin stream into the blender while mixing up a sort of mayonnaise. Season with salt and pepper.

Mix the chicken, lettuce, tomatoes, croutons and Parmesan shavings (if using) with the sauce. Spread the wraps with a tablespoon of sauce and top with the lettuce. Leave the edges free and fold in the sides of the wraps. Roll up and cut diagonally.
