Simple eggfree Strawberry Mousse (fresh or frozen strawberries)

I love Mousse, all kinds of them. After a meal or for an afternoon treat I think it’s a real pleasure to have a spoonful of this beautiful texture melt in your mouth.

One mousse that never survives more than 12 hours in our fridge is my strawberry mousse. I must really notify my family not to touch it because otherwise it disappears quicker than you can say ‘no’.

In winter when I don’t have fresh fruit at my disposition I love decorating mousse with biscuits like here for example with Linzer Augen

In addition to this it is a dessert without eggs so even pregnant women and those allergic to eggs can have their share .

There are so many things that one can make with this mousse, for example a Raspberry Cream Cake or an Iced Strawberry Parfait with crunchy chocolate.

Recipe for my delicious Strawberry Mousse

Serves 6

  • 250 g whipping cream
  • 60 g of sugar
  • 350 g strawberries (fresh or frozen)
  • some mint leaves
  • 3 sheets of gelatin

Place the gelatin leaves in cold water. Beat the cream with the whisk of a hand mixer until firm.

Clean the strawberries, wash and mash them with the sugar and mint leaves in the blender.

Heat (NOT BOIL) some of the strawberry purée and dissolve the drained gelatin in it, mix with the rest of the strawberry purée, then add carefully to the whipped cream.

Serve in a large bowl, shooters or small individual ramekins.
