Lebkuchen – the spice homemade

Christmas time is nearing so I’m starting to make Lebkuchen. I just have a major problem! Where I live I do not easily find the spice it takes to make Lebkuchen.

So I have to make it myself!

If you have a Thermomix or similar you can grind the spices as I did, otherwise you can simply use the powders.

Here’s how it works

  • 35 g cinnamon powder
  • 9 g of clove powder
  • 2 g of nutmeg powder
  • 2 g of coriander powder
  • 2 g of cardamom powder
  • 2 g of ginger powder
  • 2 g of fennel seed powder

I made too much last year, but kept it. Just used it in my baking. It’s still perfect so no worries if there is some left over. It keeps.
