Italy in Shotglasses

A couple of lovely friends will be over in a few hours to have lunch with us. As we – especially my husband loves pre-meal drinks and little appetisers, I have – yet again prepared these.

This has been one go-to recipe of mine for years.

I have already posted the Goats Cheese and Tomato Tartare Shooters and the Provence Shooters, here is the third shooter of the trio that I love to prepare for my friends and family!

Recipe Italy in Shotglasses

For 4 – 6 shotglasses

  • 60 g of green or black tapenade (that is an olive paste, but can be replaced with minced olives mixed with olive oil)
  • 50 g Pesto
  • 4 little tomatoes on the vine
  • 60 g sundried tomatoes
  • 1 – 2 mozzarella balls

Quarter the tomatoes, take out the kernels and cut into little pieces. Mix the sundried tomatoes in a mixer and add to the fresh tomatoes.

Cut the mozzarella into thin. Slices and cut out rounds that fit into the glasses.

Make alternate layers of tapenade, mozzarella, tomato paste, mozzarella and pesto.

Keep in the fridge until 10 minutes before your guests arrive!
