Austrian sausage soup (Traditional & Thermomix)

One of the soups I have eaten since I was very young is sausage soup. It was my mother’s favorite way to make us eat a lot of vegetables and we love it.

The soup is very easy to be made. Here is the recipe .

  • 3 potatoes, cubes
  • 3 carrots, slices
  • 3 celery, pieces
  • 3 onions, diced
  • Seasoning (slt, pepper, stock cube)
  • 1- 2 bayleaves
  • Frankfurt sausages, sliced

In a pan

Brown the onions in a large saucepan in a little vegetable oil. Add the carrots, potatoes and celery and cover the vegetables with water, seasoning and bay leaf. Cook until vegetables are tender.

In the Thermomix

Vegetables can be chopped with the Thermomix, but personally I really like cutting them by hand. Preheat the vegetable oil in the Thermomix for 2 min / 120 C / lowest speed. Add the cut onion and brown for 2 min / 120 C / lowest speed. Add the carrots, potatoes, celery and cover the vegetables with the water, adding the seasoning and bay leaf. Continue cooking on 120 C / counter clockwise / lowest speed until vegetables are tender. This will depend on the size of the vegetables, for me it’s usually about 30 minutes.

For both

Remove the bay leaves! Now its up to you to decide whether you prefer the soup blended or in chunks! Add the sausages to the soup and serve!
