Light Chicken Sandwich Filler


From time to time we have leftovers from our Sunday roast chicken. That is no drama at all, rather the opposite! Perfect for the lunch box! One way to use them is my meat lover’s salad, but another option is to make a lighter chicken salad to fill the sandwiches for our children’s lunch boxes. We love to eat this sandwich filling so much that we don’t necessarily wait to have leftovers 😅

In the Lunchbox for my 4-year-old son is the lighter chicken salad sandwich, slices of peppers and cherry tomatoes, a Smoothie and a water bottle. I take the cookies after school as afternoon treat, they don’t go into the Lunchbox. After a good breakfast of Porridge in the morning it’s perfect.

Recipe for 1 sandwich

  • 90 g of fried chicken
  • 30 g mayonnaise
  • 25 g yogurt
  • 5 g mustard (I use medium strength)
  • 10 g finely chopped gherkins (I personally prefer the larger gherkins which are less bitter)
  • 2 slices of bread of your choice

Chop the chicken into small pieces with a fork and maybe a knife. Put it in a bowl and add the other ingredients. Mix it all together. That’s enough for a very generously filled sandwich.
