For the next few months I have to prepare a picnic for my 4 year old son every day before he can start the school canteen.
So I added a Lunchbox category to my blog where I’ll share the recipes for the things I give him for lunch at school.
When my two big boys were the same age, I optimistically tried warm meals in thermos, but they often came back almost untouched. Children this age prefer to eat quickly so they can play with their friends. So this time I won’t make the same mistake. For those wondering why I don’t add a biscuit for dessert, this is very easy. If I’m not careful, my sons tend to eat the cookies but not the rest.
So I bring the desserts as a snack after school to congratulate them on finishing their lunch.
I’ll start with this sandwich because I know that my son loves it and it’s also a very popular topping in the Lucky Dips breads that my customers order for children’s birthdays. It’s a great classic that can be easily customized to suit your taste.
Recipe for 2 sandwiches, can be kept in the refrigerator for 2 days
- Bread (brown, white, roll or baguette)
- 3 hard-boiled eggs (cooled, peeled)
- 3 tbsp of mayonnaise
- 1 tsp of curry (optional but my favorite)
- watercress, spinach, finely chopped beef, smoked salmon, ham, lettuce, sliced tomatoes or cucumbers etc (optional)
- Salt pepper
Chop the eggs with a fork, mix them with the mayonnaise and season the egg salad to taste. Spread onto the bread. I am always very generous there and put on as much filling as possible.
