Egg salad sandwich

For the next few months I have to prepare a picnic for my 4 year old son every day before he can start the school canteen.

With the sandwich something sweet in form of raisins and for for the vitamins a homemade smoothie.

So I added a Lunchbox category to my blog where I’ll share the recipes for the things I give him for lunch at school.

When my two big boys were the same age, I optimistically tried warm meals in thermos, but they often came back almost untouched. Children this age prefer to eat quickly so they can play with their friends. So this time I won’t make the same mistake. For those wondering why I don’t add a biscuit for dessert, this is very easy. If I’m not careful, my sons tend to eat the cookies but not the rest.

For those interested here is the category Afternoon Treat – Goûter – Jause.

So I bring the desserts as a snack after school to congratulate them on finishing their lunch.

I’ll start with this sandwich because I know that my son loves it and it’s also a very popular topping in the Lucky Dips breads that my customers order for children’s birthdays. It’s a great classic that can be easily customized to suit your taste.

Recipe for 2 sandwiches, can be kept in the refrigerator for 2 days

  • Bread (brown, white, roll or baguette)
  • 3 hard-boiled eggs (cooled, peeled)
  • 3 tbsp of mayonnaise
  • 1 tsp of curry (optional but my favorite)
  • watercress, spinach, finely chopped beef, smoked salmon, ham, lettuce, sliced tomatoes or cucumbers etc (optional)
  • Salt pepper

Chop the eggs with a fork, mix them with the mayonnaise and season the egg salad to taste. Spread onto the bread. I am always very generous there and put on as much filling as possible.

The curry powder is optional but I really recommend it 👌🏻

With a little water bottle is this here perfect for my 4-year old.
