A recipe that I have loved for a long time but have never made myself are spiral potatoes. So when one of my sister offered to cook some for her barbecue, I obviously accepted with great pleasure. I love potatoes of all kinds, obviously also cooked in embers on the BBQ but the downside is that it takes quite a long time to cook. Spiral potatoes are ideal because, thanks to their cuts, the cooking time is reduced and they can also be prepared in the oven.

- 4 medium-sized floury potatoes
- Olive oil or melted butter
- salt pepper
- chopped fresh parsley (optional)
- 1 or 2 cloves of garlic (optional)
Wash and do not peel potatoes. Prick them lengthways on a skewer, being careful not to prick yourself. Cut the potato at one end until the blade touches the skewer, and then continue the incision spirally by slowly rotating the potato. Carefully push the potato apart so as not to break the spiral.
Mix the other ingredients and brush the potatoes with this flavored oil.
Place the potatoes on one side of the grill and not directly on the flames. Or bake them for 30 minutes in the oven at 189 °C until golden brown. Serve immediately, sprinkled with salt, pepper and bell pepper. Perfect with my white BBQ sauce or my simple red sauce 😋
