Express crunchy fruit pie

A wonderful recipe for the super-fast preparation of a crispy and fresh cake, perfect if you have guests.

Everything is prepared in advance and the assembly takes 2 minutes. As a topping, you can use any fruit of your choice or even use a compote such as cherry or rhubarb etc.

  • 1 rectangular or round puff pastry
  • 250 g mascarpone
  • 250 g plain yogurt
  • Zest of 1 lemon and juice of half a lemon
  • 1 sachet of vanilla sugar
  • honey
  • Fresh or steamed fruit

Unroll your puff pastry and make an incision about 1 cm from the edge with a sharp knife. Be careful not to cut through the dough. Then make diamond-shaped cuts in the middle of the dough to prevent the dough from rising too much.

Brush the whole puff pastry with an egg yolk and bake at 180 ° C for about 15 minutes.

Keep the dough at room temperature until ready to use.

In the meantime, mix the mascarpone, natural yogurt, lemon, vanilla sugar and honey. Store in the fridge. Clean your fruits and cut them into pieces or prepare your compote. Set aside too.

After the main course, it takes 2 minutes to put the cake together by spreading the cream on the puff pastry and placing the fruits on it.

Serve immediately.
