Garlic Green Beans

My favorite recipe for green beans has been the garlic green beans that I discovered when I was a teenager. I was an avid follower of Harvey Diamond and his Fit for Life lifestyle and this was one of his recipes.

For me the garlic green beans with roasted provencal tomatoes.

Absolutely delicious I serve them as a side dish or even have them as main course for myself.

For my men garlic green beans, provencal tomatoes, flavored butter and rack of lamb.

Serves 2

  • 2 tbsp olive oil
  • 1 tsp garlic, minced
  • 600 g fresh or frozen green beans
  • 1/2 tsp dried thyme
  • Freshly ground pepper
  • 570 ml water
  • 1 cube of vegetable stock
  • Squeeze of fresh lemon juice

In a large heavy saucepan, heat the oil. Add garlic and beans, and sauté over high heat to sear the beans, stirring frequently so they do not burn.

Add thyme and pepper. Add water and vegetable stock cube. Bring to the boil, cover, reduce heat to medium-low, and simmer for 20 to 30 minutes or until the beans are tender when pierced with the tip of sharp knife.

Add more water, if necessary. Frozen beans will take only half the time. Add squeeze of lemon juice, and toss well.
