Provencal tomatoes

An excellent side dish for lots of meals are the Provencal tomatoes 😍 easy to make, delicious to eat!

I’ve been doing them for years and it’s always a celebration of meals in the sun ❤️☀️

  • 8 medium tomatoes
  • 2 to 3 tbsp. olive oil
  • 2 cloves garlic
  • 2 tbsp. 1 tsp thyme
  • 2 tbsp. rosemary
  • 3 tbsp. chopped parsley
  • 2 tbsp. breadcrumbs
  • salt, freshly ground pepper

Rinse and sponge the tomatoes.

I always cut the little green stems off.

Cut them in half. Place them in a dish with the cut part facing up.


Peel the garlic cloves and chop them.
In a bowl, mix the thyme, rosemary, parsley, breadcrumbs, minced garlic, salt and pepper.

I use a garlic press that can be found here.


Divide these aromatics over the tomato halves. Sprinkle with olive oil.

Cover the dish with its lid or aluminium paper.
Cover the dish with its lid or aluminum foil. Put in the oven for 12 min, at maximum power. Remove the lid or aluminum foil and grill for 6 minutes more, turning the dish with a 1/2 turn, after 3 minutes of cooking.
Let stand 3 min before serving.
