The best Rösti recipe I know. A big favorite! I remember copying it from a cookbook I found in Marseille when I lived there just after my marriage. After one or two small modifications, it has become one of the essentials in my kitchen.
- 1 kg of boiled potatoes
- 1 large onion
- 136 g Herta sausages or bacon
- 2 tbsp of oil
- 50 g butter
- Salt, freshly ground pepper
Peel the cooked and cooled potatoes. Coarsely grate or mince them very finely. Place them in a deep dish.
Peel and chop the onion. Cut the bacon into pieces or the sausages into cubes. Put the oil to heat in a pan and brown the bacon. Add the minced onion and cook until translucent.
Pour the contents of the pan into the dish of grated or minced potatoes. Mix everything. Add salt and pepper.
Heat half the butter in a large skillet, making sure the edges are well greased. Pour the contents of the dish and press it a little. Leave it to brown slightly. Cover and cook for 20 minutes. Turn the Rösti over. To carry out this operation, butter a dish. Place the buttered side over the contents of the pan. Turn the 2 utensils at the same time. The Rösti is on the dish, the golden side on top.
Heat the rest of the butter in the same pan and slide the Rösti over the pale side. Cook for another 8 to 10 minutes. Slide the Rösti on the dish and serve immediately with a big salad.
