In these times when we are encouraged to stay as much as possible at home I have planned to prepare soups for daily dinners. I have already posted a lot of different soups, here is another one which is very popular in our house.
Ingredients
1 onion
1 garlic clove
400 g peas (frozen)
600 ml vegetable stock
200 g crème fraiche
100 g bacon
chives (optional)
Peel and cut the onion and the clove of garlic. Fry in a pan with a little oil. Add a pinch of sugar, the peas and simmer for 3-4 minutes.
Pour the vegetable stock over it and cook for about 10 minutes. Add the crème fraîche and put everything in the blender. Season with salt, pepper and nutmeg (optional).
Fry the bacon slices in a pan until they are crisp. Cut it into strips and serve with the soup.
