Cherry Tomato & Garlic Chicken

A great inspiration in cooking for me during my formative years was also my confirmation godmother. During my stay with her family during my vacations she always showed me tricks on how to cook simple and tasty food, taking care to use very good ingredients!

Being at her place for the moment I am very spoiled because she tells me to sit down and read a book while she cooks for us.

Obviously it’s impossible for me not to go into the kitchen to see her at work. And it is thanks to this that I found you a new recipe that you will simply love! It is so easy, economical, full of flavors and perfect to make for small as well as large number of guests with ease! The chicken pieces are as tender as desired, with its sauce flavored with garlic and semi-candied tomatoes.

  • Sufficient chicken thighs and drumsticks per person (personally I count 3 to 4 pieces per person)
  • lots and lots of garlic cloves
  • cherry tomatoes (about 5 per person)
  • olive oil
  • salt, pepper

Wash the chicken pieces and pat them dry with paper towel.

Choose an oven dish just large enough to put your chicken pieces in so they can sit side by side while being squeezed. Rub the pieces well with olive oil and season with salt and pepper on both sides. Place them with the skin side up.

Put lots of peeled garlic cloves between the pieces, not on the surface.

Make a small cut in the cherry tomatoes and place them with this cut downwards on the chicken pieces.

Bake in an oven preheated to 200 C for 45 minutes. Check the cooking and add time if necessary.

Serve in the oven dish with rice or potatoes and vegetables or salad of your choice. Ideal for receiving large numbers.

Lots of sauce in the dish!
