Among my friends I have several who are allergic to gluten and lactose. So I try to always have some delicious recipes despite these constraints that I can prepare for them in the event of a visit. In this recipe the fact that it’s vegan is an added bonus!
Recipe Vegan and gluten free apple and cinnamon crumble Tart
For the pie crust (20cm)
83 g vegan margarine
118 g gluten-free flour
2 tsp sugar
1 tsp of vanilla sugar
2 g gluten-free baking powder
35 g water
For the compote
400 g apples
30 g of water
30 g caster sugar
1/2 vanilla pod, split and scraped
50 g vegan margarine
For the garnish
2 to 3 apples
For the Crumble
88 g flour
2 tbsp sugar
1 tsp cinnamon
47g vegan margarine
I start with the apple compote. Peel and cut the apples into pieces.
Put them in a saucepan with the water, sugar and vanilla. Cook over medium heat for about 10 minutes. Add the butter off the heat and stir. Put in a dish to let cool.
Cut the vegan margarine into small pieces, add the flour, sugar, vanilla sugar, baking powder and water and mix everything well. Then cool the dough for about 20 minutes.
In another bowl, mix all the ingredients for the Crumble, turn the dough into small crumbs and refrigerate for 20 minutes.
Place the buttered Tarte ring on a baking sheet and press the dough in the circle. The dough is very soft therefore it must be done only by hand. Garnish the bottom of the pie with apple compote.
Peel, core and cut the apples in half. Lay each half flat, then cut them into thin slices. Arrange them in a rosette on the apple compote.
Sprinkle with cinnamon crumble and bake at 160 ° C for 40 minutes.
Alternatively you can leave the crumble and just place the apple rosette on the compote. Cut it will be necessary to put melted butter on the sliced apples so that not dry out too much.
