In our family we love soups very much! We take it regularly, there is always a pot in the fridge! Even the children love it! I’m not talking about soups as meal replacement, but ultra light soups to take just as a starter. Here is my men’s favorite recipe, available in several varieties! Creamy, light and full of flavor. Clean eating in all its glory!
Ingredients for approximately 1 liter
- 1 tbsp of neutral oil
- 3 onions
- 6 carrots
- 1-2 bay leaves
- 2 stock cubes
- 1 l of water
- Salt, pepper
In a large saucepan, fry the onions in the oil until they are translucent. Add the sliced carrots, bay leaves and stock cubes and mix with the onions. Pour a liter of water over it and cook over medium heat until the vegetables are tender. Remove the bay leaves (❗) and place the soup in the blender. If it is too thick add a little more water and correct the seasoning.
Tip: instead of the carrots use the vegetables that you enjoy like broccoli, a mixture of cucumber / spinach, tomatoes, zucchini, asparagus etc. Don’t forget the bay leaves! I guarantee it makes a huge difference! You can obviously add cream or Boursin for a smoother taste if you wish!
Nettle Soup Variation (for 4 people)
200 g nettle leaves (gloves)
250 g potatoes
1 l of water
2 vegetable stock cubes
pepper, salt (according to your taste)
For the nettle soup, cut the onion into small dice and sauté gently in olive oil. Wash the nettle leaves and add them to the pan until they are reduced. Peel the potatoes, cut them into small cubes and add them. Then pour in the liter of water and the stock cubes. Cook until the potatoes are cooked and then mix the soup until it is homogeneous. Personally I like to eat an egg in the soup (see tip how to make a hard-boiled egg – with 8 minutes here instead of the 12).
