I love this vegetable stew made with the Thermomix, but which you can also prepare in a normal pan! Creamy, warming and simply super good. A vegetarian dish that even the carnivores in my family eat!
Ingredients for 4 portions
1/2 bunch of parsley
600 g potatoes
300 g carrots
300 g swede
600 g water
1 tablespoon vegetable stock powder or 1/2 vegetable stock cube
20 g butter
300 g sour cream
30 g cornflour (mixed with a little water)
chopped parsley for sprinkling
Put the parsley in the bowl, chop it for 3 seconds / speed 8 and transfer it. Peel the potatoes, carrots and swede, cut into bite-size pieces and put them in the Varoma container. Pour the water with the powdered vegetable broth into the bowl, close the lid and put the Varoma on it, cook for 25 minutes / Varoma / speed 1. Remove the Varoma container and keep the vegetables warm. Empty the Thermomix bowl and collect the cooking broth (about 400 g). Dry the Thermomix bowl. Peel the shallot and put it in the bowl, chop 5 seconds / speed 5. Use the spatula to clean the side of the bowl. Add the butter, cook it for 2 minutes / 120 ° C / speed 1. Put the cooked mixture, sourcream, slurry (cornstarch mixed with water), salt, pepper and nutmeg in the bowl of Thermomix, boil for 6 minutes / 100 ° C / speed 1. Season again, add chopped parsley and stir for 5 seconds / level 2. Mix the sauce with the vegetables and serve.
