Gnocchi – Tomato One Pot

I will quickly share with you a delicious vegetarian recipe for midweek meals ready in 30 minutes requiring only a frying pan. It is one that I found a couple of years ago on BBC Good Food and is one that I have used ever since!

  • 1 tbsp olive oil
  • 1 onion, cut into small pieces
  • 1 red pepper, finely chopped
  • 1 clove garlic, crushed
  • 400g chopped tomatoes
  • 500g gnocchi
  • a handful of basil, sliced
  • 1 ball of mozarella, cut into chunks

Fry the onions and peppers for 5 minutes. Add the garlic and continue cooking for 1 minute. Add the tomatoes and gnocchi and cook gently for 10 – 15 minutes, stirring occasionally until the gnocchi is cooked and the sauce has thickened. Season, add the basil and mozzarella pieces.

Put the pan under the grill for 5 – 6 minutes until the cheese is soft and bubbling.
