Chocolate Mousse

I decided to share a recipe with you that is in my repertoire since I was a teenager. Despite the fact that I tested several other recipes for chocolate mousse since then with all kinds of ingredients and methods, for me this recipe is unmatched.

The ingredients are simple and there are only 4. However, the quality of your mousse remains entirely on your choice of ingredients. High quality ingredients will make all the difference. If you take chocolate with 72%, the recipe will have the perfect balance between bitter and sweet.

Imagine a chocolate-filled bite that’s soft as a cloud and that melts on your tongue. Bliss ! Especially if served with a fruity touch like orange fillets, for me it’s a must!

Recipe Chocolate Mousse

For 6

  • 200 g dark chocolate (I use chocolate at 72% )
  • 7 eggs
  • 50 g of sugar
  • 50 g butter (salted or unsalted as you prefer)

Melt chocolate in a hot water bath.

Did you know that chocolate melts faster than butter?

Beat the 7 egg whites until stiff. Transfer them to another bowl.

Now you can use the bowl and mixer for the sugar and egg yolks without having to wash them. Beat them for about 2 minutes until thick and creamy.

Pour the melted chocolate/butter mixture into the egg yolks whilst continuing to whisk.

Now, by hand please, carefully fold one third of the egg whites under the chocolate mixture.

When the egg whites are well incorporated, fold the 2nd and then the 3rd part of the egg whites under the chocolate mixture.

Now it is your choice if you want to serve the chocolate mousse in a nice big bowl or in little shooters. I always serve my mousse with orange fillets as there are some flavors that are simply perfect together and these two are a prime example!
