A perfect base cream for cakes, cupcakes and other desserts is the whipped dark ganache. I have a pretty simple version, that is absolutely delicious!
Here I used it for Halloween cupcakes made from zucchini cake perfect for autumn with its flavors of hazelnuts, cinnamon, and currant jam that I used in cupcakes to give it a fruity center .
- 40g whipping cream
- 60 g dark chocolate
- 300 g whipping cream
Bring the whipping cream to the boil, take off the heat and add 60 g of chopped dark chocolate to the mix.
Set aside to cool for a couple of minutes. Gently stir.
During this time whip the whipping cream. Once the cream is ready, gently and by hand stir in in the melted and cooled chocolate.
The Ganache is now ready to use.
