Vegan Lemon Traybake

It can be quite difficult to find good vegan recipes in my opinion. When I finally get hold of one I am always deligthed as more and more people are vegan or intolerant / averse to animal products and therefore demand rises constantly for vegetarian or vegan products.

The traybake is ideal for school functions, bake sales, office parties, picnics, etc.

This Vegan Lemon Traybake is one of my favourites.

Ingredients for one tray (30 cm x 18 cm)

  • 1 lemon, zested and juiced
  • 300 g plain flour
  • 250 g of soymilk
  • 180 g sugar
  • 125 ml sunflower oil
  • 1.5 tsp of baking powder
  • vanilla
  • For the icing
  • 200 g icing sugar
  • 30 g lemon juice

Preheat the oven to 160°C and grease a baking tray.

Mix all the ingredients for a couple of minutes in a mixer and spread evenly onto the baking tray. Bake for 40 min.

Make the icing by mixing the icing sugar and the lemon juice. Spread onto the traybake and let it cool before cutting the slices.
