One of my favorite soups is the semolina dumpling soup. It’s a typical Austrian soup that my grandmother regularly prepared for me! It is found in almost all restaurants in Austria. You can even buy dumplings in sachets, but frankly it’s so much better to make them yourself. It is very comforting and perfect for the cooler weather that is coming up.
Recipe Semolina Dumplings Soup
For 4 people
- 1 liter of broth (homemade or done with a cube of good quality)
- 240 g of semolina
- 120 g butter (room temperature)
- 2 eggs
Beat the butter until creamy. Add the eggs and continue mixing. Then mix with semolina, salt and grated nutmeg. Put in the fridge to let the dough rest.
Heat up the broth.
Remove the dough from the fridge and form the dumplings either with 2 tablespoons or 2 teaspoons, as you prefer.
Cook the dumplings for about 15 minutes in the broth over medium heat, then serve in the soup plates garnished with chives.
