One of my extended familys favourite starters are my Bruschetta!
There are many ways to make these delicious Italian antipasti, but after having tried many ways of preparing Bruschette, I find that this one is my personal favourite.
It’s very easily done, can be prepared partly in advance, but has to be assembled at the last minute!
- Baguette, ~ 2-3 slices per person
- Olive oil
- For the topping
- Ripe tomatoes, cut into very little dices
- Onion, finely diced (2/5 of onions to 3/5 of tomatoes)
- Fresh basil, chopped
- Olive oil
- Balsamic vinegar
- Salt, black pepper
- To finish
- Green Pesto
Start by preparing the tomato topping.
Place the finely diced tomatoes and onions into a bowl, add the fresh basil and season with a little olive oil and a good portion of Balsamic vinegar (to taste). Add salt and pepper.
This preparation can be kept in the fridge for several days.
When preparing the starter, cut the bread into slizes of about 1 cm thickness. Heat some oil in a frying pan and grill the baguette slices on both sides until golden.
Place on the serving dish, top with heaps of tomato topping and crown the preparation with a big dollop of green Pesto.
