I am not a fan of red meat, unlike the 4 men in my household, so the traditional meatballs are not something I myself eat, but these gorgeous little Chicken Meatballs are absolutely delicious!! Even I can’t resist these, especially not in combination with the Simple Red Sauce.
They are moist and full of flavour! Ideal for a meal but also extremely handy for Picnics!
- 400 g chicken or turkey mince
- 2 slices of leftover bread
- 80 ml of milk
- 1 onion, chopped into small pieces
- 1 garlic clove, minced
- 1/2 red pepper, deseeded and chopped into small pieces
- fresh thyme, but dried will do as well
- 1 egg
- fresh parsley, chopped
- 30 g flour
- paprika spice
- Olive Oil
- salt and pepper
Tear the bread slices into small pieces and place in a bowl with the milk to soften it. Fry the onion, garlic and red pepper in a pan until soft.
Take the bread out of the bowl and press out the excess milk. Mix the minced meat, bread, onions, garlic, red pepper, thyme and parsley with one egg.
In a deep plate place the flour, and in the other the Paprika.
Form walnut siced meatballs (I use an ice cream scoop so that they all have the same size more or less) and roll them first in the flour, then in the paprika.
Serve with the Simple Red Sauce.
