Chicken Meatballs

I am not a fan of red meat, unlike the 4 men in my household, so the traditional meatballs are not something I myself eat, but these gorgeous little Chicken Meatballs are absolutely delicious!! Even I can’t resist these, especially not in combination with the Simple Red Sauce.

They are moist and full of flavour! Ideal for a meal but also extremely handy for Picnics!

  • 400 g chicken or turkey mince
  • 2 slices of leftover bread
  • 80 ml of milk
  • 1 onion, chopped into small pieces
  • 1 garlic clove, minced
  • 1/2 red pepper, deseeded and chopped into small pieces
  • fresh thyme, but dried will do as well
  • 1 egg
  • fresh parsley, chopped
  • 30 g flour
  • paprika spice
  • Olive Oil
  • salt and pepper

Tear the bread slices into small pieces and place in a bowl with the milk to soften it. Fry the onion, garlic and red pepper in a pan until soft.

Take the bread out of the bowl and press out the excess milk. Mix the minced meat, bread, onions, garlic, red pepper, thyme and parsley with one egg.

In a deep plate place the flour, and in the other the Paprika.

Form walnut siced meatballs (I use an ice cream scoop so that they all have the same size more or less) and roll them first in the flour, then in the paprika.

Fry the meatballs in the frying pan over medium heat until golden brown. No need to use excessive amounts of oil. You can finish the cooking in the oven to avoid them getting too dark.

Serve with the Simple Red Sauce.

If eaten warm serve for example with crushed potatoes with sour cream and chives, roasted garlic mashed potatoes or zucchini potato mash.

  1. I also cook them, with chicken mince (I rarely eat red meat too), but now I’m baking them in the oven, since i don’t like fried things too much. Very good!
