Tomato Tarte

As soon as the summer starts the tomatoes are at their best! This is the time to make this gorgeous Tomato Tarte!

Red ones or heritage tomatoes, your choice!

Very well known in France and much less in the rest of the world it’s bliss to make and to eat, ideally with a green salad on the side.

Light, delicious and tasting of summer.

Picnic mode 😋


  • ready rolled Puff Pastry (rectangular or round) or roll it out yourself
  • Dijon mustard
  • Emmental or Comté slices (or any other you have)
  • Really fresh and ripe tomatoes (please never store your tomatoes in the fridge)
  • pepper, salt
  • olive oil

Take a ready rolled puff pastry, spread mustard on it leaving a small border of puff pastry, add slices of cheese on top of the mustard and finish with a layer of fresh tomatoes. You just need a baking sheet for it, no cake or tart pan needed.

Add fresh pepper and salt and some drops of olive oil. Put into preheated oven at 190 C and cook until puff pastry is ready.

Please don’t throw the leftovers away, just cut the green parts out and make my delicious Bruschette!
