I have come across a delicious recipe that looked so good that I had to make it! As always I have tweaked it a little bit to make it somewhat lighter and less sugary and it was a big success. We have done it several times since using also raspberries, blueberries, mangos etc. It’s the no bake Strawberry Tarte which is delightful to make – and eat – during the hot summer days as you don’t have to switch on the oven.
- 80 g butter
- 150 g Oatmeal cookies
- 6 Gelatine leaves
- 500 g strawberries
- 1 lemon (zest and juice)
- 100 g sugar
- 100 g cream cheese
- 250 g yogurt
- 100 g whipped cream
- unsalted chopped pistachios and mint leaves to decorate
Grease a rectangular mould (12 x 35 cm) with a bit of butter. Mix the cookies in a blender until they are finely crumbled. Melt the butter in a little pan and mix in with the cookie crumbles. Spread this mix evenly into the mould – don’t forget to spread it up the sides as well. Place into the fridge.
Meanwhile soften the Gelatine in cold water. Wash and clean 2/3 of the strawberries and mix them with the lemon juice, sugar and the vanilla. Blend the yogurt, cream cheese and lemon zest. Melt the squeezed out Gelatine gently over low heat, add 2 spoonfuls of the yogurt mix and whisk. Add it to the rest of the yogurt mixture, add the strawberry puree and gently fold the whipped cream in as well.
Pour the Strawberry cream onto the cookie base in the mould and let it set overnight.
Decorate before serving with the rest of the strawberries, the pistachios and some mint leaves.
