Spanish Red Pepper Dip

This is the Dip that one of my aunts, who has grown up in Spain, made for a family gathering when I was a Teenager. I found it so incredibly delicious that I wrote down the recipe and countless years later I still make it regularly.

  • 1 red pepper
  • 225 g Philadelphia
  • 2 tbsp cream
  • 2 tbsp parmesan
  • 1/2 ts paprika powder
  • 1 pinch of Cayenne pepper
  • 90 g dried abricots
  • 60 g unsalted pistachios

Fill all the ingredients into a blender and mix until you have the desired consistency.
