It’s time for BBQs!!!! Finally the sun is arriving, warm weather, gardens in bloom, people being happy thanks to these rays of sunlight shining on them.
There are a couple of side dishes for BBQs that I enjoy hugely!
Especially these Stuffed Tomato Parcels!
- 1 tbsp olive oil
- 2 tbsp of sunflower seeds
- 1 chopped onion
- 1 chopped garlic clove
- 500 g fresh spinach, shredded
- pinch of freshly grated nutmeg
- salt, pepper
- 4 big beef tomatoes
- 140 g dized mozzarella
Preheat the BBQ. Heat the oil and add sunflower seeds and cook until golden. Add onion and cook over low heat for 5 minutes or until softened. Add the garlic and spinach, cover and cook for 2 – 3 minutes or until spinach has wilted. Remove the saucepan from the heat and season to taste with nutmeg, salt and pepper. Leave to cool. Empty tomatoes, chop the flesh and stir it into the spinach mixture with the mozzarella cheese. Fill the tomato shells with spinach and cheese mixture and replace the tops. Enclose tomato securely in aluminium foil. Cook for 10 minutes, turning occasionally. Serve immediately in parcels.
