It’s time for BBQs!!!! Finally the sun is arriving, warm weather, gardens in bloom, people being happy thanks to these rays of sunlight shining on them.
There are a couple of side dishes for BBQs that I enjoy hugely!
The Vegetable Parcels are always very popular!
- 1 kg mixed baby vegetables (carrots, squash, corn cobs, plum tomatoes, leeks, courgettes, onions, etc)
- zest of 1 lemon
- 115 g unsalted butter
- 3 tbsp chopped fresh herbs (parsley, thyme)
- garlic
- salt, pepper
Finely grate the lemon rind. Mix the zest, butter, herbs and garlic into a food processor until blended, then season with salt and pepper. Wrap into clingfilm and reserve in the fridge.
Place the vegetables on 4 aluminium sheets. Divide the flavoured butter equally between the vegetables, dotting it on top. Fold up the sides of the foil. Cook over medium-hot BBQ for 25 – 30 minutes. Serve.
