Fruit Carpaccio

Very easy and simple ideas for a light breakfast, dessert or for a summer buffet 😊

Pineapple Carpaccio with Mint Sugar

  • 1 pineapple, well peeled, the hard core removed
  • 4 tbsp sugar
  • a couple of mint leaves (the rough stem in the middle of the leaves removed)

Cut the pineapples into very thin slices (works okay by hand but best with a slicing machine which can be found here).

Arrange on a platter. With a mortar crush the mint into the sugar until the sugar has turned green and all the bits of the leaves are gone.

Serve in a small bowl with the pineapples.

I use my Mandoline to slice the fruit ever so thinly and a granite mortar and pestle to help me make the herb sugar in seconds. You can find the items I use on http://www.amazon.co.uk/shop/auxdelicesdecaroline

Strawberry – Kiwi Carpaccio with Basil sugar

  • Kiwi
  • 4 tbsp sugar
