Very easy and simple ideas for a light breakfast, dessert or for a summer buffet 😊

Pineapple Carpaccio with Mint Sugar
- 1 pineapple, well peeled, the hard core removed
- 4 tbsp sugar
- a couple of mint leaves (the rough stem in the middle of the leaves removed)
Cut the pineapples into very thin slices (works okay by hand but best with a slicing machine which can be found here).
Arrange on a platter. With a mortar crush the mint into the sugar until the sugar has turned green and all the bits of the leaves are gone.
Serve in a small bowl with the pineapples.


Strawberry – Kiwi Carpaccio with Basil sugar
- Strawberries
- Kiwi
- 4 tbsp sugar
- Basil leaves
Cut the strawberries and kiwi into very thin slices (works okay by hand but best with a slicing machine which can be found here ).
Arrange on a platter. With a mortar crush the basil into the sugar until the sugar has turned green and all the bits of the leaves are gone.
Serve in a small bowl with the kiwi and strawberries.
