This is one fish recipe that I love to prepare. it is so easy and very light as well.
The cucumber vegetables go very well with the dill, the fish and the potatoes and smell delicious.
You can easily prepare it in advance and just add the fillets last minute. I have even prepared this for 20 people once.
Recipe fish fillet with dill – cucumbers
- 1 onion
- 600 g cucumbers
- 4 fish fillets
- 2 bunches of dill
- 1 tbsp of butter
- salt, pepper
- 200 ml vegetable stock
- 200 g of sourcream
- 2 tbsp of wholegrain mustard
- 4 tsp lemon juice
- 1-2 tbsp oil
Peel the onion and dice it. Peel the cucumber and take off the seeds (see tip). Cut the cucumber diagonally into pieces of 5 mm.
Chop the dill finely. Heat the butter in a wide pot and fry the onions until golden, not brown. Add the cucumber and cook for another 2 minutes. Add the vegetable stock and bring quickly to a boil. Mix the Sourcream with the mustard and stir into the cucumbers. Season the mix with salt, pepper and lemon juice.
Heat the oil in a pan, season the fish fillets and fry them 3 minutes on each side.
Add the chopped dill to the cucumbers and serve together with steamed potatoes or rice.
Tip to take the seeds out of the cucumbers slice them lengthwise, take a teaspoon and take of the seeds. Otherwise the cucumbers will let too much water.
Serve for example with crushed potatoes with sour cream and chives, roasted garlic mashed potatoes or zucchini potato mash.
