Tuscan Almond Pesto (Traditional & Thermomix)

At a party a couple of months ago I have been made to try a delicious spread made in the Thermomix.

It was so good I asked for the recipe, which is by Tenina Holder, I just modified it ever so slightly.

Now it is obviously made for the Thermomix, but honestly can be made in any good blender.

Here we go.

Recipe Tuscan Almond Pesto

  • 65 g semi sundried tomatoes
  • 3 cloves of garlic
  • 75 g kalamata olives pitted
  • 60 g whole almonds
  • 2 – 3 sprigs of rosemary, foliage only
  • A few dried chilli flakes to taste
  • 2 tsp sugar
  • 15 g balsamic vinegar
  • 80 g Extra Virgin Olive Oil
  • 1 tbsp tomato puree

Place all ingredients into Thermomix bowl and with lid set to closed position, press Turbo button 3-4 times until chunky texture is achieved.
That’s it!! Enjoy!

Tip Serve with an array of crackers or with the delicious Parmesan and Poppy Biscuits or chips or crispbreads, or add oil and lemon juice for an amazing salad dressing or toss through hot cooked pasta for a quick and easy dinner.
