This recipe is one that I like to prepare as a light mid-week dinner but it works just as well for lunch.
It is Greek inspired and perfect for these sunny days that are starting to arrive !
Recipe Herbed Meatballs with Feta Dip
- For the herbed meatballs
- 1 onion, chopped
- 1 garlic clove, minced
- 1/2 bunch of parsley, chopped
- 400 g minced meat (ideal is half beef and half porc)
- 1 tbsp flour
- 1 stock cube
- 1 tbsp oil
- For the feta dip
- 100 g feta
- 250 g yoghurt
- 1/2 cucumber
- 1 bunch of chives, chopped
- Pita bread
Finely dice the onion. Mash the garlic. Pluck the parsley leaves and chop finely. (Thermomix add everything together 5 sec / level 6). Add everything to the minced meat. Dust with flour, season with the soup cube and pepper, mix well (Thermomix 1 min / kneading setting) and form 24 balls. Fry in hot oil over medium heat until golden brown.
Chop the chives and mix with the peeled, pitted, grated cucumber and salt and pepper (Thermomix 4 sec / speed 6). Mash the feta cheese and mix with the yoghurt (Thermomix 6 sec / reverse rotation / speed 4).
Serve the meatballs and the dip with cucumber slices and the toasted and opened pita bread!
