It is again Meatless Monday and people are thinking about what meal to prepare for their families that doesn’t involve meat. This here is delicious and easy to make!
When friends come over for a quick lunch I enjoy making this gorgeous Italian dish!
It is ideal for flexitarians like me, but is equally loved by meat-eaters! It is very filling and brings a bit of Italian flavours into these wintery days, but is also ideal for those hot summer days in addition to a fresh green salad.
It is easy to make and very nourishing. Even my teenage son loves it!
Recipe Melanzane alla Parmigiana
- 4 little aubergines
- 2 tins of chopped tomatoes
- 5 sundried tomatoes, cut into small pieces
- 1 onion
- 2 cloves of garlic
- 1 bay leaf
- 2 branches of thyme
- 100 g parmesan
- 2 mozzarella balls
- 100 ml olive oil
- salt, freshly ground pepper
Preheat the grill in your oven. Cut the aubergines into lons slices. Salt and pepper. Put the slices of aubergines onto a baking tray and drizzle with olive oil. Cook for 10 minutes under the grill, turning them over after 5 minutes.
Cook the minced onions and garlic in a bit of oil. Add the tomatoes, sundried tomatoes, thyme and bay-leaf and let it simmer for 15 minutes.
Heat the oven to 200C. Cut the mozzarella into slices. Fill a dish with aubergine slices, tomato sauce, mozzarella and parmesan alternating them, finishing with parmesan.
Place into the oven for 40 minutes until the surface is bubbly. Serve as soon as it is ready.
Tip you can prepare this in advance and bake once you are ready to eat.
A trick to make young children eat it is to peel the aubergine and cut it into pieces than mix it under the other ingrédients 😉
