Low Carb – Stuffed Cucumbers

After the festivities of Shrove Tuesday and all the pancakes we are craving something lighter to eat!

As we do like to eat low carb on certain days of the week, the Stuffed Cucumbers are perfect.

This is one recipe I have been doing for years!

It is really easy to make, light and delicious!

Recipe Stuffed Cucumber

For 2

  • 1 cucumber
  • 1 onion
  • 1 tbsp sunflower oil
  • 2 garlic cloves
  • 300 g minced beef
  • 1 tin of tomatoes
  • 3 tbsp of tomato paste
  • Salt
  • 1 tsp herbes de provence
  • beef stock (cube)
  • cayenne pepper to taste
  • 5 tbsp of soured cream
  • 1 tbsp minced herbs (parsley and dill)

Peel and half the cucumber, taking out the kernels with the aid of a little spoon

Peel and cut the onions into little pieces and fry gently in oil. Add the minced garlic and the minced meat and fry.

Mix the tomatoes and add 2 – 3 tbsp to the minced meat in addition to the tomato puree, the salt and the herbes de provence.

Cut the halved cucumbers again in 2 and fill with the minced meat.

Place the mixed tomatoes in an oven-safe frying pan, add the stock cube and the cayenne. Put the stuffed cucumbers into the sauce.

Put a lid (or aluminium paper) onto the pan and cook in the oven to 30 -40 minutes. At the end add the sour cream and serve garnished with the herbs.
