And here we go – its Monday again and for all of those who try to make the meat free Monday happen, I will share with you one of my favourite pasta recipes.
It won’t take you more time to make the sauce than to boil the pasta and in my opinion it is sublime in its simplicity.
You can also use this sauce wonderfully for other preparations, such as a delicious Courgette Bake or wonderful Melanzane alla Parmigiana – Eggplant Parmesan Gratin.

Recipe for Super Speedy Sundried Tomato Pasta
- 1 tin of tomatoes
- 12 sundried tomatoes in oil
- 30 g butter
- basil leaves
- salt (I almost always use herb salt)
- a ball of mozzarella
- 200 g dried pasta
Bring the water to the boil, add salt and the pasta. Cook for the required amount of time.
In a small casserole melt the butter and add the tomatoes. Chop the sundried tomatoes into chunks and add to he casserole. Simmer for about 3 minutes. Season to taste and add the basil.
Mix with a hand-held blender.
Drain the pasta, add the sauce, tear Mozzarella into chunks, add to the pasta and sprinkle with parmesan. Enjoy!!!!
