If you are looking for a recipe that can easily be prepared in advance this one is for you.
I like to prepare this either on the day before or in the morning and have the hands free for my boys in the afternoon.
It’s ideal especially on school nights or busy weekends.
Recipe Meatballs Hunter Style
- 1 old bread roll or piece of baguette
- 2 onions
- 250 g mushrooms
- 2 big carrots
- 500 g minced beef
- 1 egg
- 2 teaspoons mustard
- salt, pepper
- 2 tablespoons oil
- 50 g lardons
- 1 tablespoon flour
- 200 ml milk
- 100 g grated cheese
- 2 tablespoons butter
Soften the old bread rolls in water. Peel and dice finely the onions. Wash and peel carrots and mushrooms and cut both into slices.
Express the water from the now softened bread roll. Mix with mince, egg, half of the onions and mustard. Season to taste. Form 8 meatballs from the meat mixture.
Heat oil in the frying pan. Fry the meatballs about 3 minutes on each side and then put into an ovenproof dish.
In the hot oil fry first the lardons and then add the carrots, mushrooms and the rest of the onions. Add the flour and cook for a minute. Pour ¼ l of water and the milk into the pan and simmer for about 5 minutes. Season the sauce to taste and pour over the meatballs.
Top with some grated cheese and cook in the oven at 175C for 20 – 25 minutes.
Here I served it with rice.
