One very well known Austrian soup is the Frittatensuppe made from plain pancakes, tightly rolled up and sliced into coils served in a bowl of clear soup or beef broth.
So if ever by miracle you find yourself with leftover pancakes, don’t hesitate to give this delicious soup a try
Here the recipe for a really lovely vegetable broth that is very easily made.

Recipe Vegetable Bouillon
- 3 leeks
- 5 carrots
- 3 turnips
- 1 branch of celery
- 1 onion pricked with whole cloves
- 1 bag of bouquet garni
Wash all the vegetable and cut into pieces. Prick the onion whith the whole cloves and put everything into a big pan. Pour 1.5 l of water over the vegetables and add the bouquet garni. Add the salt, cover and let cook over medium heat for 45 minutes.
After it has cooked strain the soup through a sieve and serve the vegetables separately if you want to.
Roll up one pancake per person and cut it into slices. Fill the soup into a plate and add the pancake slices into it! Delicious!
