To feed your family healthily ideally you give them fish to eat every now and then! At least this is what I try to do twice a week. Now as I am not a fish eater myself I tend to rely on the opinion of my family to know if a certain recipe is a success or not. This one is a resounding success! The cod is tender and a delight to eat.
Obviously it’s delicious with rice or pasta as well.
Recipe Cod with Lemon sauce
- 300 g fish fillets,
- 40 ml oil,
- 80 ml fish stock,
- juice of half a lemon,
- 2 table spoons of single cream,
- 1 table spoon of parsley.
Prepare the fillets with salt and pepper. Heat the oil in a pan and fry the fillets in it, 2 – 3 minutes per side, then put into another dish and keep warm.
Add the stock to the pan and let simmer for 5 minutes.
Add the lemon juice and bring to a quick boil.
Take the pan off the stove, add the cream and the parsley.
Serve the fillets with the sauce.
