Sometimes you just would like to eat a salad, even in winter. This here is one of my favourites and I make it regularly. You can either eat it as is as a side, or as a light meal in itself served with blue cheese crumbled into it, or duck breast cut into slices. Whichever you prefer.
Here is the recipe for the winter salad
(recipe found in the Christmas edition of BBC Good Food 2018)
75 g walnut pieces,
130g bag mixed green salad leaves,
3 pears
50 g pomegranate seeds.
Vinaigrette:
3 tbsp. white wine vinegar
1 tbsp. runny honey
1 tsp. wholegrain mustard,
2 tbsp. olive oil
