Winter Salad

Sometimes you just would like to eat a salad, even in winter. This here is one of my favourites and I make it regularly. You can either eat it as is as a side, or as a light meal in itself served with blue cheese crumbled into it, or duck breast cut into slices. Whichever you prefer.

Ingredients for 4

  • 75 g walnut pieces,
  • 130g bag mixed green salad leaves,
  • 3 pears
  • 50 g pomegranate seeds.
  • Vinaigrette:
  • 3 tbsp. white wine vinegar
  • 1 tbsp. runny honey
  • 1 tsp. wholegrain mustard,
  • 2 tbsp. olive oil
